Kitchen served breakfast on weekends: Eggs Benedict, Biscuits & Gravy, Breakfast Burritos, Eggs any style.
Lunch specials 7 days a week: Meatloaf, Cincinatti Chili, Specialty burgers, Roadhouse Salads
Dinners were tied to the International Music Series, featuring touring artists from all over the world. Dinner specials reflected the culture or character of the band. From Irish to Hawaiian, folk to African and even Mongolian throat singers, I was challenged to make 5 unique specials a week. I designed & cooked over 300 one of a kind dinners.

Trout Farm Inn Steakhouse 2003 - Felton, California
Serving dinners only, with family dining, seating 120. Specialty steak and fish. Gorgonzola & Tarragon Rib Eye, Fresh Trout, Salmon Fish & Chips with Wasabi Mustard, Fresh Salads & Baked Potatoes. I was owner/head chef.

Dine on Nine, Ben Lomond, California - 2006-2007
Roadhouse diner, serving Black Angus burgers, Chicken, BBQ, Chili and Salads. Open 7 days a week, 12 hours a day. I was sole person in kitchen for 6 months. I owned the lease and also booked the music and provided the sound equipment and engineers for all the music. Closed in June of 2007.
Currently I do special occasions, parties, dinners for two and charity events.
